OLADI ОЛАДЬИ

 

OLADI WITH KEFIR

There are a lot of different oladi recipes.  This one – is for oladi with kefir (kind of liquid Russian yogurt, which you can find in any Russian market, and in Ralphs or Jons as well.  You can use kefir from Trader Joe’s or even regular buttermilk)


So, what you need:


1 cup flour
~ 1 cup kefir (I think for 1 cup flour you’ll need a bit less than 1 cup kefir)
1 egg
½ tea spoon salt
1 table spoon sugar
½ tea spoon baking soda

Mix egg with sugar, add gradually flour and kefir, mix well, add salt and sugar (actually, by your taste).  Add baking soda slaked in vinegar (add soda to a little bowl or Table spoon, fill the spoon with vinegar and add this mixture to the dough).  Why vinegar? – They told that vinegar eliminates the taste of soda, though I do sometimes oladi pretty well without vinegar. Mix well.  The dough should have a consistency of Canadian sour cream, or less than American one.


Now you are ready to fry oladi.
Grease frying pan with any oil, put dough in batches, and bake.  Turn when bubbles form on the top.  Fry until the second side is golden brown.


Serve with jam, honey, syrup or sour cream with sugar.  Enjoy!

 

 

YEAST OLADI


1 cup warm water
1 cup flour
½ - 1 teaspoon dry yeast
1 Table spoon sugar
½ teaspoon salt

 

Place the yeast in a small cup with warm water (about 2 Table spoons); mix and let dissolve.  Add a little bit of sugar and flour and set aside.  Meanwhile mix water with flour (gradually adding water to flour), add salt and sugar, and mix well.  Add risen yeast   The consistency of dough should be approximately as a sour cream.  So, you might need more water for the same cup of flour, or less flour for a cup of water.

 

Grease the skillet with any oil, put dough in batches, and bake.  Turn when bubbles form on the top.  Fry until the second side is golden brown.


Serve with jam, honey, syrup or sour cream with sugar.  Enjoy!
